Tasting Note

This is a great introduction to Croatian wine from the Dalmatia region (which is the reason there is a smiling Dalmatian on the label.) Using the indigenous Babic variety, this is a light to medium-bodied red with some lovely pure cherry, raspberry and plum fruit and lots of smoky herbaceous notes, giving this a very savoury feel. The palate is bright and lively with an initial burst of fruit and that rustic quality filling the finish. It's a very characterful wine that rewards some time taken to allow it to open up a little.

Pair this with a platter or mature cheese and charcuterie.

Planted just 10 years ago, the organically farmed Testament vineyard looks down from its hilltop position over the adriatic sea and benefits from a permanent sea breeze. Here, enologist Juraj Sladić makes pure, terroir driven and well balanced wines like this one. Originating from the UNESCO-protected Bucavac vineyard only 10 km from Testament Winery, Babić is the local red grape variety of Dalmatia. It is a difficult variety to handle due to difficult vineyard condition soils heavy in limestone karst. Harvest is done by hand and fermentation with skin contact lasted 8 days. The wine goes through spontaneous malolactic fermentation before aging in stainless steel tanks in order to preserve fruit and freshness, with a final short rest in barrique barrels before bottling.
