The Languedoc made its name on volume - simple, low cost bulk wine, shipped north by canal and then by rail to keep industrial France in table wine. When that market went, growers pulled up the over-productive vines and put the money into the sites worth farming. What was lost was quantity. The crested bird on the label is a hoopoe, and it is on there for a reason: Monplézy have been off chemical pesticides so long that the insects came back and the hoopoes came after them, nesting in the old vine trunks the family leave standing on purpose. Minerality first, then broom flowers, then a crisp, salty palate that finishes on sea air and a pleasant bitter twist. Strawberry and dark cherry with a twist of black pepper, juicy the whole way through and no hard edges anywhere. Les Saisonniers means the seasonal workers, and it is a nod to the people who bring the harvest in. Dark fruit with a real black-pepper bite and an acidity that keeps the whole thing moving. A classic Maury, from a dry-red appellation that has only existed since November 2011, farmed at twelve to seventeen hectolitres a hectare. Give it twenty minutes to open up and it turns generous and spicy without ever getting heavy, with real grit underneath the fruit. Martin Perolari took the estate on alone in 2019 and had it certified organic within two years.
