100% Chardonnay, wild fermented in French oak where it remains for 12 months with its lees, for the first 4Â months the lee's are stirred to add more complexity and texture. Some malolactic fermentation takes place adding further texture and richness to the wine. As expected then the finished wine is a big rich Chardonnay, creamy and with lots of ripe fruits. An ideal pairing with roasted chicken.Â
The wine is organic and suitable for vegans.
