Spain's Palomino grape takes a holiday to South Africa, best known for producing fine sherries here it Ian has vinified it to create an extraordinary wine full of complex fruit, pithy citrus peel texture, toasted almonds whilst retaining a fresh, clean finish and a touch of that signature salinity.
Naude Wines is the culmination of a journey that started over 30 years ago with Ian Naude hoping to craft wines that tell a story of time and place. Working with the diversity on offer in South Africa Ian is lucky enough to work with some of the countries oldest vines and describes his work as very much hands off winemaking with the aim of 'taking a liquid photograph of a specific ecosystem and putting that in a bottle.'
Try this with mediterranean fish and olive tapenade to compliment that salty finish on the wine.
