The base here is the Citadelle Reserve which is then blended with Demerara sugar which itself has been caramalised and aged for three to four months in casks. This blend of gin and sugar is then aged in casks for several more months to marry together and create an Old Tom gin which is fresh and forceful. It is both full and elegant, sweet and sour, floral and vegetal. Incredibly complex with juniper, orange zest, fennel, cumin and coffee all coming through at different times on the palate. A truly unique expression of Old Tom and the perfect gin to sip or to experiment with in cocktails.
