He uses minimal sulphur and allows the wines to evolve naturally, aiming for purity of fruit, silky tannins and good length.
The Bourgogne Cote D'Or Pinot Noir is a fruit forward, fresh approchable style of Burgundy made for drinking now. Full of ripe strawberries, raspberries and red cherries, silky smooth with bright acidity. This is a great red wine to try with a fattier fish such as salmon.
