Welsh sparkling wine from two vineyard sites on the edge of Monmouth. 100% Pinot Noir, fermented un a mixture of cement eggs, stainless tnak and Austrian oak with 12 months on the lees then a further 5 years on the lees in the bottle. There's zero dosage after disgorgement making it a brut nature. Full of ripe red apples, citrus fruit, brazil nuts and that traditional British, zippy acidity that we find in our sparkling wines.
Planted back in 2006 and 07 they now have 4 hectares of mature vines with a further of 8 hectares of young Pinot Noir and Chardonnay planted. Richard and Joy Morris have built a state of the art winery and have a holistic approach to all their acivities in the vineyards and the winery and practise biodynamics. The land was previously used as a grazing pasture and the sandstone soils are healthy and well nourished.
