Tasting Note

A wine that is showing wonderful potential. Ripe and expressive, bursting with life, the wine opens with bright notes of red fruit, lush strawberries and raspberries. A few more swirls of the glass and the fruit intensifies even further, revealing aromas of morello cherry. Smooth and tasty on an intense and sappy palate that preserves this juicy character which is characteristic of the vintage. Skillfully made in a hot and dry vintage. The balancing acidity brings energy to the palate and invigorates the body. This is a generous yet precise example of the Canon style, which combines consistency with fluidity.

This wine will benefit from decanting for an 2 hours of opening now and from further careful cellaring of 4-10+ years.

Château Canon, a renowned St. Emilion estate, takes its name from Jacques Kanon, who acquired the property in 1760. Chanel, which has owned it since 1996 and also holds Château Rauzan-Ségla in Margaux, currently manages the estate. Situated at the heart of the St. Emilion appellation, southwest of the town, Canon boasts 24 hectares of vineyards, divided between the limestone plateau and the clay-loam slopes.

Harvested by hand and transported in small crates, Manual selection sorting of bunches. Separate vinification, vatting using gravity, into conical shaped stainless steel vats with a double walled system for temperature control. Malolactic: 1/3 in new barrels and 2/3 in stainless steel vats.
