I'm on a bit of a Tabali trip at the moment having met the winemaker at a dinner last month. Although very enjoyable, it can be difficult to remember exactly what the wines taste like at these things, so I thought I'd try this again in the comfort of my own home. Tabali were the first winery in the Limari region of Chile on the edge of the Atacama desert. The area only gets 50ml of rainfall a year, so the vineyards are irrigated with meltwater from the Andes adn the area is one of the most exciting in Chile, especially in Felipe's expert (and very big) hands

Grape: 100% Chardonnay
Region: Limari Valley, Chile
Soil:
Winemaking: Gentle pressing, barrel fermentation and 8 months barrel ageing. Felipe is very particular about the oak he uses, even specifying the part of the forest his barrels come from! 25% Malolactic fermentation.

Tasting Note This wine is all about balance - of fruit and oak, creaminess and elegance, acidity and alcohol. The predominant flavours are reminiscent of the best of Burgundy - hints of oatmeal on the nose with buttery fruit flavours and gentle toasted hazelnuts. Despite the oak ageing, the palate has a dreamy, floaty-lightness which belies that classic Chardonnay mouth feel, and the finish carries caramelized pineapples and beurre blanc.
Cellaring This is on stonking form, and I really don't see the point in ageing it - but it will keep another 18 months if you must!
