The crémant is made from 60% Mauzac (a variery local to the region), 30% Chardonnay and 10% Chenin Blanc - quite an interesting start, and is made by the same method used in Champagne. 9 months of lees contact and at least a year in Jean-Claude's cellars before release means that the wine is already starting to develop when it reaches your table, showing white floral aromatics, fresh citrus and toasty brioche.

Fermentation is stopped early by passing the wine through a series of very fine filters. The result is this luscious, frizzante wine. The sweet fruit palate is beautifully balanced by great acidity and the foamy mouth feel which make this a thrilling, refreshing lunchtime tipple

When making a sparkling wine it is usual to add a little sugar at the end of the process to bring the sweetness up to the house style. This wine does not have this which makes it an ideal food wine - perfect with a shellfish starter.
