Fermentation is stopped early by passing the wine through a series of very fine filters. The result is this luscious, frizzante wine. The sweet fruit palate is beautifully balanced by great acidity and the foamy mouth feel which make this a thrilling, refreshing lunchtime tipple.

As mentioned elsewhere on this site, Tasmania's cool climate is ideal for Pinot Noir and Chardonnay, and thus for making Champagne style wines. Hardly surprising then that Louis Roederer (of Cristal fame) had a hand in setting up this winery. A special occassion wine at a Friday night price.
