Soil Type: Tuffeau base with some sandy topsoil

Winemaking: Traditional method is applied up until disgorgement, when the liqueur de tirage contains absolutely no sugar. There is also no chaptalization or residual sugar - hence Triple Zero!

ABV: 12.5%

Tasting Note
Well, there's no surprise that this is crisp and dry - really dry with searing acidity - but there is still plenty of body and flavour. The flavours and aromas are primarily sitrus, with a good leesy background and some toastiness. Minerality is fantastic and the finish is super-clean. The wine I tried had been in the bottle some time, so was a little fuller than when it was young (we still have a few bottles from this batch at reserve.) I'd shy away from serving this on its own, but with creamy fish sauces, oysters, or as a palate cleanser between courses it's unrivaled.

Cellaring
The high acidity levels will allow this bottle to be kept for some time, and the palate will become rounder and richer, but consult us when purchasing - as with all NV wines, it's worth checking how long it's been bottled for.

If you like this, why not try….. hmm, bit of a tricky one this, but your best bet is Champagne Jacquesson Cuvee 730 the drier of our two Jacquesson champagnes, with a relatively high proportion of Pinot Meunier.
