Cognac, Brandies & Aquavitae

3 years in oak (at least) for this little number, but most is blended from casks aged between 10 and 15 years old.

XO Cognac must have at least 6 years of oak ageing, although most have far more. Trijol is a small distiller, who produces brandies of remarkable class.

Pilzer makes delicate Grappas from the bi-product of winemaking from some of northern Italy's top producers (like Cesconi). The grape varieties are distilled separately, just like this Traminer (or Gewurztraminer) which has pronounced rose petal aromas and is great with dark chocolate.

The fragrance and delicacy of Pilzers grappas are down in part to his use of steam rather than flame to heat the stills. This grappa made from Pinot Noir has floral, violet aromas with semi-dried fruits, warm spice and straw.

A fresh fruit distillation (well, the fruit is fermented before distillation but you know what I mean) known in France as Poire William, this has powerful and deliciously fresh pear aromas. Subtle, aromatic and clean.

Something a little bit special and loaded with chracter. It's aged in sherry casks and this influence is subtly present both on the nose and palate. Rich and creamy with a little oak and, of coures, hints of sherry.
